Thanksgiving Leftover Tacos
These leftover Thanksgiving tacos are something I have looked forward to for the past couple of years. I know it seems like an odd combo (I thought so too when I first heard about them)- but just trust me on this one and give it a try.
Background
First of all this taco idea was suggested to me by the lovely folks at Iconic Cocktail. I originally made it with their iconic cocktail mixer but have since also made it with leftover cranberry sauce if Iām out of mixer. Iconic Cocktail is a local mixer company out of Phoenix, AZ but they ship nationwide. If your going to order from them I highly recommend you try this mini mixer pack. If I were you I would do a cranberry thyme, prickly pear, ginga syrup, and a lime leaf tonic.
This is what I love about shopping local and e specially shopping at the farmers markets. You get to meet the owners, and talk through ways to use their products which turns into new family favorites such as these tacos.
Ingredients
Iconic Cocktail Cranberry Thyme or some watered down homemade cranberry sauce
leftover green beans
leftover stuffing or dressing
leftover turkey- this recipe is my favorite.

Step by Step
Put the cranberry thyme mixer or the watered down homemade cranberry sauce in a sauce pan with a few slices of jalapeno. Bring to a simmer and cook until slightly reduced.
Toast or grill slightly the tortillas.
Warm the turkey, stuffing, and green beans in a saute pan over low heat with a little water until hot.
Assemble tacos by placing the tortilla on a plate, topping with stuffing, turkey, and a few green beans, and drizzling over the cranberry jalapeno sauce.
Devour and repeat.
