Peach Blackberry Baked Oatmeal
Peaches + Blackberries + Warming Ginger and Cinnamon spices yield a perfectly tart yet comforting baked oatmeal dish.
Background
If you’ve been following along on instagram you know I signed up for a summer of peaches. You also know that I’m a sucker for whatever is fresh and local at the farmers market. What you may not know is we love love love baked oatmeal at our house, its the perfect make ahead breakfast and super easy for a toddler to eat. So all that combined with the fact that I recently picked up a copy of The Flavor Bible by Andrew Dornenburg and Karen A. Paige meant it was time for me to experiment with making my own baked oatmeal recipe.
I consulted The Flavor Bible and learned that peaches, blackberries, cinnamon, ginger, lemon, vanilla and honey all go well together so that would be the main flavors in my dish.
Then after scouring dozens of baked oatmeal recipes I came to find some common ground in all of them. Although ingredients varied the basic ratio for the baked oatmeal remained about the same. So I used that as my base for coming up with this recipe.
1 part dry: 1 part wet: 1 egg: 1/8th to 1/4 parts sweet: 1 part fruit

Ingredients
Dry:
2 cups old fashioned oats (cannot be quick oats)
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp salt
Wet:
3/4 cup milk ( I used whole but you can use a substitute)
1 cup unsweetened applesauce
2-4 TBSP honey (I used 2 TBSP, but if you like sweeter use 4)
1 TBSP Lemon Juice
1 1/2 tsp vanilla
1 egg
Fruit:
1 cup diced peaches (about 2 small peaches)
1 cup diced blackberries
optional (peaches and blackberries to top with)
Step by Step
Preheat oven to 350 degrees.
Mix together all the dry ingredients in a bowl.
Whisk together all the wet ingredients in a liquid measuring cup
Pour the wet ingredients into the dry and mix until combined.
Stir gently in the diced fruit.
Grease a 9x9 baking dish and pour in the mixture.
Bake for 30-45 minutes until set and top is just slightly browning (mine took about 35 minutes).
Top with yogurt if you wish and enjoy!
